Açaí Soft Serve Mix

Real açaí that ships dry, stores on a shelf, and becomes soft serve in twenty minutes. Allen Lee Foods Açaí Soft Serve Mix is a powder made from açaí grown in Pará, Brazil. One 1 kg (2.2 lb) pouch whisked into one US gallon of water makes about 1.2 gallons of soft serve base for any standard soft serve machine. Sealed pouches keep for 18 months at room temperature.

Why shelf-stable

Shelf-stable mix changes the math.

Frozen açaí needs freezer trucks, freezer warehouses and freezer space in-store. The mix removes all three. For operations without frozen logistics, or menus adding açaí as one item among many, it is the lowest-friction way to serve real açaí.

  • No waste on a slow week

    You mix a gallon at a time. What you don't mix is still sealed, still good, and still worth what you paid for it.

  • No freezer

    Pouches store at room temperature for 18 months. The freezer space you would have given açaí stays free for the rest of your menu.

  • No reefer freight

    It ships dry and at room temperature: no refrigerated truck, no dry ice, no warehouse pickup.

Step by step

Five steps, twenty minutes.

    Measure

    Pour 1 US gallon (3.79 L) of filtered, room-temperature water into a clean container.

    Add

    Add the entire contents of one 1 kg (2.2 lb) pouch.

    Whisk

    Whisk until fully dissolved with no lumps, about two minutes.

    Rest

    Let it rest 20 minutes so the mix hydrates completely.

    Pour

    Pour into the machine and run it exactly as you would a dairy mix.

Overrun. Run it as a non-dairy sorbet base, typically 25–40%. Lower overrun gives the denser, spoonable texture bowl customers expect; higher overrun stretches yield for cones.
